The dry-ageing cabinet
Pick the cut, choose how it's cooked
Wagyu, Angus, Rubia Gallega, Chianina: we select and butcher our meat from scratch. Ageing in the cold room softens the fibres and concentrates the flavour; then the charcoal grill does the rest.
